Any tips for budgeting?

I get paid hourly, and I’m having difficulty budgeting because every paycheck is a little different, sometimes a lot different. I’m paying off credit cards so I want to use as much money for that as I can, but I still need to make ends meet. I’ve been keeping track of bill amounts and due dates for a year, but even then those always vary month-to-month. Any good ideas or resources?
Just to clarify, I have enough money to put toward my credit card debt, but I’m having trouble figuring out exactly how much to send so that I still have enough to pay my bills.

I’m looking at Quicken 2008, Moneydance and others but keen on knowing your own choices that might have more features or just be a stronger complement.
